Caturra variety was introduced in Colombia en the 70´s, and in Finca Mallorca we've learned to produce it since the beginning in 1987. Very sweet cherries are obtained from this mutation of Bourbon and with good processes we are able to get sweet fruity notes, and also a dense body. We create our most selling product: Estate Plus.

The sticky flesh (mostly sugars) are removed by different fermentation procedures. With the depulper we remove the outer skin of the cherry, take it to the fermentation tanks and the hydrolysis and begin properly
The outer skin is also removed with a depulper, but we don't initiate the hydrolysis to ferment the esh of sugars attached to the parchment. So the coffee begins drying just after the depulping process is completed.
After a manual selection of cherries we begin drying without removing the outer skin, that way the fermentation of the sugars start inside the cherry itself.
